Dine On the Patio with Guest Chef Aaron Brooks

Chef Aaron Brooks, a quite familiar face at the Carysfort Kitchen, has spent the last 20 years cooking around the world with Four Seasons Hotels and Resorts, incorporating the culture and cuisine of each locale into his expertly-crafted dishes.
Brooks’ culinary journey has taken him from his native Australia through Vancouver and Boston, landing him in Miami where he’s dazzled critics and diners for the past 10 years as Executive Chef at EDGE Steak & Bar. Brooks’ commitment to quality plays an integral role in positioning EDGE at the forefront of Miami’s culinary scene by providing premium selections of grain-fed, grass-fed, dry-aged and wagyu beef, paired with farm-to-table ingredients. He lives by his motto, “Food has to be seasonal and relevant to where you are.”
Members may remember Brooks as for the last three years, he has taken the traditional cooking school “classroom” outside to the Carysfort Hall Patio to give students an outdoor grilling experience that is far from your typical backyard BBQ. Separating himself from what’s expected of traditional American steakhouse, Brooks’ approach is what he calls “steakhouse light” – beautifully prepared meats accompanied by fresh, light and vegetable focused side dishes.
On Monday, March 29, Members will have the opportunity to sample firsthand this progressive approach to steakhouse dining as Brooks joins Members for yet another incredible class on the Sailfish Patio. On the menu:
• Grilled tomato gazpacho with burnt avocado and queso fresco tartine
• Tuna wrapped and grilled in vine leaves, white beans, green grapes, fennel and olives
• Chermoula marinated lamb chops with chickpea tabouli
• Vanilla panna cotta with burnt citrus salad and basil
